Yancha tastebox: shades of roasting
From Spring to Autumn, farmers in Wuyishan work to prepare the finest yancha, "rock teas". The leaves growing on the magnificent cliffs of Wuyi national park are picked at their best level of maturation, then processed and dried by charcoal roasting in special bamboo baskets, where they get their unique roasted fragrance rich in notes of cacao, caramel, coffee, nuts, dried fruits, sweet spices like cinnamon and the empyreumatic aromas born from the power of fire. Some yancha are ready right after the first roasting, others get roasted a second time in summer and even a third time in late autumn. In this tastebox we collected yancha with different levels of roasting, to make you explore the unique way in which this peculiar processing plays with the taste given by the cultivar and the terroir, the famous Yanyun 岩韵 fragrance, that literally means Rock (Yan 岩) Rhyme (Yun 韵), two Chinese characters, that bring us in that gorgeous landscapes.
