Bai Hao Yin Zhen - Silver Needle White Tea
Delicate buds shine of a silver hue when touched by warm water, and they open like a rare flower with the first infusion, releasing the gentle purity of Fuding Dabai cultivar. These delicate silver-colored needles - yin zhen 银针 - are covered by soft white fur - bai hao 白毫 -, which is rich in amino acids, making the tea particularly fresh. However, the slight astringency that is sign of a very young harvest quickly disappears, leaving in the palate a gentle mellowness, and a creamy aftertaste.The silver shades of the buds leave the way to the warmer tones of light gold that characterize the liquor. As we continue with the infusions, an ever more intense floral note opens in the cup, offering lingering hues of wet roses, thyme, parsley, and linden honey. Finally, a hint of unripe fruit emerges, reminiscent of pear and white melon. Baihaoyinzhen is the first white tea ever created, born at the end of the 18th century.
