Enshi Yulu 恩施玉露 - Green Tea

Composed of precious unripe buds and the youngest apical leaves, Enshi Yulu, literally "dewdrops of Enshi", is one of the most delicate green teas, as fresh as morning dew after the first spring rain. The tight hand-made needle shape (针形 zhēnxíng) of the leaves coming from Enshi original cultivar Quntizhong 群体种 is reminiscent of pine needles, and they are covered with very fine silvery fur, rich in selenium from which the refreshing umami flavor derives, with balsamic hues and a long-lasting fruity aftertaste of unripe pineapple and white peaches.  The peculiar delicacy of these leaves is also an indicator of their processing: they are in fact steamed (Zhēng qīng 蒸青) to inhibit the oxidative action of enzymes through heat. This ancient technique, originated in Tang dynasty, was lost in time and brought back by skilled tea masters only in 1998.
